The very first thing that you will have to remember is that facing a blaster-using enemy is nothing like facing an enemy saberist. Gunners can blast you from far, are not likely to come close to you willingly and are usually in groups, thus increasing their firepower.

When in the Defensive pose, your rate of blocking is increased, you take less damage from blasterbolts, take up less of your Force mana, but at the same time you are reduced to the pace of walking. When in the Offensive pose, you are free to run/walk around at a far faster pace. When not stationary, not holding down the Block-button and not attacking, auto-blocking will kick in to block blasterfire at a very high Force mana cost. This is less effective, as not nearly as many of shots get deflected, damage is like normal and thus a well placed shot will kill you. Think back to how Jedi Master Coleman Trebor was defeated by merely 3 shots from Jango Fett at Geonosis.
This is not to say that using this type of blocking is useless. It is an effective tactic to get close to your enemy and strike him down, if used properly. Similar to the entrance of the Elite Jedi Task Force at the Geonosis arena, you are able to to perform the same.
Another concept to be taken into account in fights against gunners is the Increased Drain Range (IDR). This means that when a gunner is firing at a Jedi at close range, he drains more of the Jedi's mana then at long range.
Blocking, in any form, uses up your Force mana. Using the Force in any way uses up your Force mana as well. Depending on your Defense level and saber stance/type, you will either take up lots of mana per blocked shot or little. However, whenever your Force mana is empty, you will not be able to block any shots at all. So watch your Force-assisted actions well, your connection to the Force is crucial!
You can also defend against blaster fire while attacking if you have Saber Attack, Saber Defense, Force Sense and Force Block at level 3. This is known as the Attack-Defense technique and allows you to block while attacking at the expense of increased mana drain when doing so.
